Prep the night before – season thighs with Mr. Bevis BBQ Rub original or spicy.
When ready to cook the thighs, get the the temperature to 185 degrees F.
Close smoker or grill for 10 minutes.
While grill is heating up, add a light coat of Mr. Bevis BBQ Rub to thighs.
Place thighs on smoker or grill and allow to smoke for 30 minutes.
Increase temperature to 350 degrees F and continue to cook after 30 minutes.
Allow chicken thighs to cook on the grill grate and cook for about 20-35 minutes.
Chicken is done at 165 degrees F internal temperature.
Dependent upon thickness of skin & fat, you can do thighs up to an internal temperature of 180 degrees F for a crispier skin.
Remove from smoker or grill and let rest for 5 minutes before serving.
